These are absolutely delicious and easy to make so give them a crack. This recipe makes up to four serves (if you have a portion on a nice piece of grainy toast it will go around 4 people). Enjoy!
2 cans of cannelloni beans, 1 large onion (brown or red), 2 cloves of fresh garlic peeled and crushed, 2 sprigs of parsley, 1 bay leaf, 2 teaspoons (tsp) cumin, 1 tsp paprika, 2 tsp ground coriander, 1 tsp tomato paste, 3-4 chopped fresh tomatoes or 1 can of chopped tomatoes, 2 sliced capsicum.
Saute the onion, garlic and spices for 3-5 minutes in a medium sized pot. Add the beans, tomatoes, paste and capsicum. Just cover with water (or vegetable stock if desired), cover the pot and bring to the boil. Season to taste but remember the golden rule; in it, not on it! Simmer until the beans are tender and add the parsley right at the end.
