Here’s a recipe for Chicken Tikka Masala I saw on TV the other day. It is very simple to make and yummy! When it comes to working out your rice portion, a good guide is 0.75-1.0 cup cooked for an 80 kg male. Dig in!
Ingredients (serves 3-4)
Drizzle of oil, approx 300 gms chicken breast diced, 3-4 spring onions, 2 cloves garlic, 2 cm piece ginger, 350 ml of a LIGHT version of cream (there are plenty of varieties available now), 200 gms tomato puree, 4 tsp garam masala, 1 tsp paprika, 1 tsp mustard powder (or chili powder), salt and pepper.
Add chicken to the pan and brown. Add chopped spring onions and finely chopped garlic and ginger, cook for 2 mins. Add the cream and puree, then the spices and cook for a further 5 mins. Season to taste. Serve with Basmati rice cooked with curry powder added to the water and garnish the meal with fresh coriander.
